Today, we will visit a factory where Swiss cheese is made. This guy is pulling cheese from this vat with a sheet of, (you guessed it), cheese cloth.
It is put into these molds and the water is squeezed out of it by hand.

In the middle of the photo, you can see the cows as they head home. Must be Swiss cows since they produce Swiss cheese.
This is the way they churned the milk in the old days. Rather primitive ……
…….compared to the way they do it today in a spotlessly clean processing plant.
Like a sculptor, this guy is cutting off everything that doesn’t look like a cheese wheel.
The cheese is stored in climate controlled rooms.
It seems the store sells things besides cheese – wine for instance.
This is a pretty neat setup. The products are made downstairs and sold upstairs.
